Ingredients:

    • 1 (13.25 to 15.25 ounce) package yellow cake mix

    • 2 large eggs

    • 3/4 cup sour cream

    • 1/4 cup vegetable oil

    • 1/2 teaspoon vanilla extract

    Crumble Topping

    • 3/4 cup packed brown sugar

    • 1/4 cup rolled oats

    • 1 teaspoon ground cinnamon

    • 1/2 cup cold butter, cut into pieces

    Drizzle

    • 4 ounces cream cheese, softened

    • 1/3 cup confectioners sugar

    • 3 tablespoons milk, plus more as needed

    • 1 pinch salt

Instructions:

    1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x9-inch baking pan.

    2. For cake base, combine cake mix, eggs, sour cream, vegetable oil, and vanilla extract in a bowl. Whisk until smooth; set aside.

    3. For crumble topping, combine brown sugar, oats, cinnamon, and salt in a bowl. Cut in butter with a pastry cutter or fork until coarse crumbs form.

    4. Spoon the cake base evenly into the prepared baking pan. Sprinkle the crumble topping evenly over the batter.

    5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool for 30 minutes before serving. 

    6. For drizzle topping, whisk cream cheese, confectioner's sugar, milk, and salt together in a bowl until smooth. Drizzle over the cooled coffee cake before serving.
