Buttered noodles get an upgrade thanks to oyster sauce, hoisin sauce, and sesame oil.
Kosher salt, for pasta cooking water
1/2 pound uncooked pasta (such as elbow macaroni or spaghetti)
4 tablespoons unsalted butter, cut into 1/2-inch cubes
1 1/2 tablespoons oyster sauce
1 tablespoon hoisin sauce
3/4 teaspoon toasted sesame oil
Sesame seeds, for garnish (optional)
Thinly sliced scallions, for garnish (optional)
Bring a large saucepan of salted water to a boil over high. Add pasta, and cook according to the package directions. Drain pasta, reserving 1/2 cup cooking water; do not wash pot.
Return pasta to reserved pot. Add butter and 1/4 cup reserved cooking water, and toss until butter is melted and clings to pasta, about 2 minutes. Add oyster sauce, hoisin sauce, and sesame oil; toss until a creamy sauce forms, adding more reserved cooking water, 1 tablespoon at a time, to achieve desired consistency. Divide evenly among 2 bowls, and garnish with sesame seeds and scallions, if using. Serve immediately.
